Fall Brunch Recipes: Live from the Farm
Fall is the perfect season for gathering around the table, and on my recent Live from the Farm on Instagram, I shared some of my favorite cozy brunch recipes. I posted the recipe for the Apple Butter Cinnamon Rolls in my last post, and now I’m excited to share two more delicious dishes that are just right for autumn mornings… Apple Cider Mimosas and a Harvest Hash Brown Breakfast Bundt!

How to make the perfect Fall Brunch Cocktail!
Brunch always calls for a cocktail (or mocktail, if you prefer!) These apple cider mimosas are perfect for events where children are in attendance. I always add champagne to each individual glass so these can be served as cocktails or mocktails! Freeze the cider overnight with apple slices in individual muffin tins, then serve with my favorite spoon/straw combos. Once the ice melts, it turns into a delicious slushy that’s perfect for sipping.

Apple Cider Mimosas Recipe
Ingredients
2 jugs of Apple Cider (Natural Apple Juice is great if you cannot find cider)
1 bottle of Champagne
Apples, chopped into wedges
1/2 cup Apple Butter
1/2 cup Brown Sugar
Instructions
Freeze apple cider and apple slices in individual muffin tins overnight.
Dip the rim of glasses in apple butter then brown sugar.
To each glass, add an apple cider ice cube, a bit more apple cider, then top off with champagne.
Enjoy!

Harvest HashBrown Breakfast Bundt
Following recipes is not my strong suit. Tommy will tell you that I am more of a “pinch of this, splash of that” kind of cook. But SO many of y’all asked me for the recipe for this Hashbrown Casserole in a Bundt pan that I served at brunch, so I’ve posted a step-by-step video on Instagram and the recipe is below! I’ll link it at the bottom of this recipe so you can watch me make it from scratch!
Harvest HashBrown Breakfast Bundt
Ingredients
For Crust:
1 bag frozen hash browns, thawed
2 eggs
3 tbsp butter, melted
Seasonings: garlic powder, onion powder, salt, pepper
For Filling:
1 cup caramelized onions
1 ½ cups sautéed mushrooms
6 slices bacon, cooked & crumbled
1 cup cheese of choice
6 eggs + 1 cup milk
Garnish:
1 tsp thyme
½ tsp smoked paprika
chopped green onions
Instructions
For Crust – Mix thawed hash browns with 2 eggs, butter, and seasonings. Press into a greased bundt pan. (I’ve had this Nordic Ware Bundt pan forever!) Bake 30 min at 375°F until golden brown around the edges.
Filling – Cook onions, mushrooms, and bacon on stovetop.
Assemble – Whisk 6 eggs, milk, thyme, paprika, salt, pepper. Stir in filling + cheese. Pour over baked crust.
Bake – Return to oven 30–40 min, until set and golden.
Serve – Cool 10 min, invert, garnish with herbs, slice & enjoy.
